My fiancee and I just got married at Palmetto Bay on February 25th. We have been ‘working’ with Cecilia for about 8 months prior to coordinate everything and it could not have been easier! Everything was done over email and was seamless! Cecilia is an amazing at what she does and we owe the best day of our lives to her. The wedding day itself was executed by Cecilia with uttermost precision and it seriously could not have been more perfect – from the ceremony setup to the beautiful reception with the most gorgeous decor, exceptional band (thank you Kristofer and Cultura band) to the wonderful service and delicious food! Thank you Cecilia for all of your amazing work! You made out day as well as our stay more special than we could have ever imagined! We cannot wait to be back!
Cecilia handled everything to plan…they picked us up at our ship and shuttled 37 of us to the resort….on the beach on the other side of the island, away from the fray. It was lovely. Exactly what my husband (a 2nd marriage for both of us) had envisioned. A year later, we still are so pleased by our choice to have our wedding here. The margaritas were great …the flowers they did for us were spectacularly simple and elegant and all our guests had such a good time no one wanted to leave to go back to the ship! Elda, the dancing bartender really made our reception special as she interacted will all our guests beautifully and with island charm. They gave me a villa to change in and freshen up before the ceremony and it was just lovely with a wrap around porch and full kitchen, 2 or 3 bedrooms and at least 2 or 3 bedrooms. I’d highly recommend for anyone wanting a memorable experience. We are very thankful for the entire staff and Cecilia.
Recommended for anyone who would like a beach wedding!!! Cecilia the Wedding Coordinator handled it all. We had 38 guest who went on a cruise with us for this event. I was so worried, first wedding, first cruise and depending on someone in another country to depend on. WELL it was the most beautiful setting and ceremony ever. All 38 guest did not want to leave. Cecilia handled the officiator, the music for wedding, the photographer and reception and not to mention the FOOD. Absolutley the best. Since we were limited on time due to the cruise we just had appetizers but there were plenty and never ran out. There are many of us that will return to Roatan just to relax and take in the beautiful beach. She even had a hair stylist and makeup artist for us. You just show up and everything just falls into place for you to relax and enjoy.
Had my wedding here with approximately 30 guests and the entire week was absolutely wonderful. In addition to the wedding, Cecilia (the wedding coordinator) helped me plan a cocktail party and a BBQ. The wedding itself was beautiful and I left all the details to the amazing staff. The ceremony site (on the beach) was stunning and the reception was magical poolside. Food and drink were great and the villas were really nice too!
My husband and I held our wedding in Roatan on West End beach in February We rented houses on West End for our family and friends – so we decided to just do our wedding on the beach next to the houses. Since we picked our location and were not staying at a resort – we didn’t know where to start planning! The company we rented the houses from suggested Cecilia Mendez Chamer – the wedding planner of Roatan, since she does weddings on other parts of the island as well. I contacted Cecilia and she responded immedately, agreed to help us (on pretty short notice) and started planning our special day! I was so relieved to have her in charge! Our wedding was pretty low-key and we didn’t want to spend a lot of money but she got us a TON of bang for our buck! I sent her a long list of items I wanted to for the wedding and she made all of my dreams come true! She immediately started sending back information and lots of pictures so I would know as many details as possible. Cecilia was amazingly fast with her responses to my emails and took care of everythingI needed. I felt totally at east with the planning process – even though I’d never been to Roatan and had never even spoken to her on the phone before we arrived on the island! A couple of her staff members met us when we arrived in Roatan and helped us figure out the details of where everything would take place. On the day of the wedding we we completely stress free – she arranged for someone to come to the house to do my hair, delivered the cake and champagne I’d requested to the vistas and everything was on time. I watched my wedding set up taking place from the balcony of our house while I got ready! We walked over to our ceremony,(which was perfectly timed with the sunset since Cecilia had our meeting the day before at the exact time when the wedding would happen so we could gauge how the sunset would look for our pictures). We completed our ceremony and then walked back to the houses – no clean up – so stress free! – and our families enjoyed that a lot! The only bad thing about the wedding was that since we chose to have it on a public beach, there was quite a bit of road noise and other people around, but Cecilia had given me very fair warning of these things when we chose our site. We decided to do it there anyway and knew there would be some peripheral noise. We were so happy to be getting married that it didn’t matter to us! After the ceremony Cecilia had set up a wonderful dinner at a local restaurant (Besos) and we arrived to find a special table decorated for us and our family – added bonus! The dinner was romantic and the food was great so it was a great suggestion from Cecilia as well. Overall, I would definitely recommend Cecilia as a wedding planner to anyone who would like to have their wedding in Roatan. The photographer she recommeded, Darren with Roatan Photography, did an AMAZING job also. We were super impressed with his work and we adore our pictures! They turned out so beautifully!!! We had a great experience and are so grateful to Cecilia for all her hard work and careful planning. Thanks Cecilia!! We hope to visit Roatan again very soon!
Preparing a wedding with the bride in Denmark and the groom in mainland Honduras, while at the same time incorporating the different country’s traditions into the wedding was a pretty big challenge for us, but with the help of Cecilia Mendez, a very competent and professional wedding coordinator our wedding turned out to be exactly what we hoped for and more! She was on top of every little detail and made sure everything was thought of. We had a beautiful ceremony at the private beach on a sunny Saturday afternoon in February with an acoustic guitar playing for the walk down the aisle, an amazing photographer, who made sure our pictures were ready on a dvd before we left the island the week after, and Cecilia even made sure to have an wonderful hair and make up artist, Destiny, at the resort, who made the bride look her best ever! The food was delicious. Everybody should have a taste of the coconut shrimp appetizers! We are looking forward to doing the whole thing over on our 25th wedding anniversary!
We planned this private (only bride and groom) wedding via email with Cecilia. The wedding was a package of services for a set price. Cecilia set me a list of items we needed to submit 2 weeks prior to arrival. She also allowed me to be as involved in the details as I wanted to be. We wanted a stress-less wedding, so I expected when we signed up to go here that it was a set plan, “cookie cutter” type wedding like I had seen on large chain resort web sites. Not so. She let me pick color of flowers, type of flowers, flavor of cake, etc. We gave her a little direction, reds/yellows/ oranges, tropical flowers, RUM cake (his choice), and asked her to make it beautiful, which she orchestrated perfectly, even more beautiful than we ever imagined. Tiny details that were so perfect. Cecilia was great to work with on getting the government approval of our paperwork.
Just a few weeks ago we celebrated our amazing wedding day at Palmetto Bay Plantation in Roatan, Honduras. One of the reasons we chose Roatan for our destination wedding was because of Palmetto Bay, and its amazing event planner Cecilia, both of which came highly recommended. We didn’t stay at Palmetto Bay, but we loved the idea of our wedding being an ‘excursion day’ for our 40 guests. I have been an event planner for over 12 years and I knew that it wanted to work with a professional to plan our day, and create a unique and memorable experience for us and all our friends and family. It started about 6 months before the wedding trip when we sent an email of images and rough ideas of what our ‘wedding vision’ would be. In the months leading up to our trip Cecilia was quick to respond to emails, so very patient with all my questions and ‘type-A’ attention to details, and very helpful with the process of getting our Honduras marriage license. When we arrived in Roatan Cecilia spent a whole afternoon taking us through the day. We met with the florist / decorator Maria, our officiant Kent and she event took us over to meet the hair stylist she had recommended so I could have a hair trial. On our way back to the resort we were staying at, Cecilia (and her fantastic friend Ivan who entertained my husband while we girls talked flowers and hair), took some extra time to take us on a quick tour of West End to show us some of their favourite places to eat and go for a drink. When our wedding day arrived the bridesmaids and I were treated like total VIPs. When we got to the venue it was already being transformed into the beautiful ‘wedding vision’ we had sent months before. They had brought in the exact paper lanterns and created exactly the centre peices and decorative touches that I had sent months earlier. I’m told at other resort weddings you get a few pre-set centrepeice styles, cakes or decorative packages to chose from. Not at Palmetto Bay. Everything was customized to what we wanted, event down to the tiny pearls in the vases holding the flowers and the details on the cake. Cecila and Maria created a beautiful scene for us to have our day, and the flower bouquets that Maria created for my bridesmaids and I were so perfect. I had so many comments on my gorgeous flowers – and she did a beautiful job working in the little maple leaf pendant I had brought from home (a little peice of Canada with us on our day). For the bridesmaids and I, we had a gorgeous 3 bedroom villa to use for the day, and after a quick tour of the place we settled in with some champagne and fresh fruit and anything we asked for. Hair & make up was done beautifully by Destiny (from Destiny International Hair Design) and when the moment arrived Cecilia had everything set up and running smoothly. OUr officiant Kent provided a beautiful ceremony that spoke exactly to what Tom and I were looking for. It was laughter and tears and moment we both love looking back on. It takes a total pro to plan the wedding of an event planner, and Cecilia is nothing but a pro. Everything went smoothly, the food was excellent, the drinks were plentiful and the staff were so friendly and helpful. Our DJ was fantastic and kept the party going all night! There were shuttles running all evening so that guests could head back to our resort when they were ready, and the additional entertainment that Ceclia arranged for us was amazing. The fire show was a highlight of the night and the ‘special surprise’ they had for us made for some amazing pictures! One of the things we liked about Palmetto Bay was that it was a single package price that included everything we wanted. There was no ‘extra charges’ or ‘hidden fees’ – so there was no debating later on if we wanted to add or upgrade something at a cost. It was all included and everything we asked for provided with a smile. In the weeks since our wedding we have looked back on our day and tried to think of something we would have changed or done differently. There’s not a single thing we can think of. I don’t know many brides who can say that. I hope someday we can make it back to Roatan and maybe stay at Palmetto Bay for the whole visit. But if we don’t – we’ll always have the memories of an amazing day that was everything we wanted and more. Thanks Cecila!
Cecilia, the manager of the resort and wedding planner, was amazing! She was friendly, organized, patient, responsive, and mostly importantly… Did not operate on Island Time. A couple of emails and phone calls was all she needed to plan our wedding exactly as we wanted. There are not many people on Roatan who could tame a Bridezilla from NYC.
Fast forward a year, 43 of our closest family and friends arrive for our wedding. We descended on the resort, taking filling up most of the villas. Like most weddings, we also had someone crash the events namely a Tropical Storm. The wind and rain was a disappointment, but ultimately proved extremely beneficial. If it was sunny, we all would have done our own thing and partake in the many activities that Palmetto offers (kayaking, sailing, snorkeling, diving, volleyball, horseback riding, etc). However, the storm forced us to be together. Many games of Scrabble, Spades, Hearts, and Poker ensued as well as lots of stories and laughs! Our group quickly connected and spent quality time together like families before the advent of cellphones and WiFi. The staff kept our drinks filled ( you must try Eric’s mojito) and allowed us to make the main lodge into a gigantic playroom, filled with dancing, laughing, and shenanigans. The rain did not hinder our “Welcome Party”, which was the first event. The staff served traditional Honduran food that delighted all of our guests. Palmetto Bay arranged for both traditional, local dancers and a fire dancer show to entertain our guests all evening. As luck would have it, the sun came out the day of the wedding. Cecilia and staff adapted accordingly and attended to every detail. Palm leaves and conch shells lined the route to our beach side nuptials. Classical acoustic guitar renditions of our song selections were performed by Kristopher Goldman during the ceremony. White linen and colorful island flowers adorned the reception area. Fantastic mojitos and margaritas were served during Cocktail Hour. An exceptional dinner menu and wedding cake left no one unsatisfied. In short, exactly the wedding we dreamed of and more. This was a dream wedding for us, an Eco-luxury resort that became our own private hideaway. It might not be everyone’s cup of tea (it isn’t Sandals or Beaches), but that is perfect for us. Our guests and us left Palmetto Bay Plantation with smiles on our faces and plans to return in the near future.
